From the Sea, a Living Heritage
ARMATORE’s roots lie in the nets of the tonnaroti and the wooden barrels infused with colatura. Today, the company honours this legacy with the same respect for the sea and its rhythms, while embracing innovation. Its fleet operates in full compliance with regulations and seasonality, prioritising the Mediterranean Sea, particularly FAO Area 37, to ensure genuine traceability and sustainability.
Bluefin Tuna and Bottarga: Handcrafted Excellence
At the heart of Armatore’s production is Mediterranean bluefin tuna, carefully selected at origin and prized for its superior flavour, texture, and nutritional profile compared to yellowfin tuna. The most noble cuts, including ventresca, are processed with artisanal care, alongside bluefin tuna bottarga, dried slowly according to traditional methods to preserve intensity and purity.
Anchovies: The Soul of Armatore
Anchovies are the true core of Armatore’s craftsmanship. Processed entirely by hand by the women of Cetara, each phase—from cleaning to salt maturation and packaging—follows time-honoured rituals. From these skilled hands come anchovy fillets in olive oil and the iconic Colatura di Alici di Cetara DOP, aged for at least 24 months in chestnut barrels, without the use of plastic. A concentrated essence of the sea, recognised and appreciated worldwide.
4Rotte: Rediscovering Forgotten Fish
With the 4Rotte line, Armatore celebrates lesser-known Mediterranean species often overlooked despite their exceptional flavour and nutritional value. Mackerel, bonito, little tunny, albacore, amberjack, frigate tuna, ventresca of frigate tuna, and swordfish are all Mediterranean-caught and artisanally processed, offered in olive oil or natural form for an authentic journey across four maritime routes.
