Scotti Riso per Arancine is an Originario-variety rice chosen specifically for one of Italy's most celebrated street foods: the arancina. The Originario grain is characterised by its small, round profile and exceptional starch content, which causes the cooked rice to bind together naturally and hold its shape when moulded – a critical quality for producing arancini that stay firm during coating, frying and serving without falling apart.
The difference between a great arancina and a disappointing one often comes down to the rice. Long-grain varieties stay too separate; Arborio or Carnaroli can work but tend to over-thicken. Originario variety, used by Italian home cooks and professional kitchens in Sicily and across southern Italy, strikes the right balance: it absorbs the cooking liquid and saffron flavour evenly, releases just enough starch to bind, yet retains a pleasant texture in the finished fried ball. Scotti's selection adds the consistency and reliability of a brand that has been milling rice in Pavia since 1860.

How to Cook
For arancini:
- Bring 2.5 litres of lightly salted water (with vegetable stock and a pinch of saffron if desired) to the boil in a large pan.
- Add 1kg of rice, stir for 30 seconds, cover and reduce heat to low.
- Simmer for 14–15 minutes until all the water is absorbed.
- Stir in butter and grated Grana Padano cheese. Spread onto a wide tray and leave to cool completely – ideally refrigerate overnight to allow the rice to firm up.
- Once cold, shape the rice around your chosen filling, coat in batter and breadcrumbs, and fry in oil at 180°C for approximately 5 minutes until golden.
For plain boiled rice: cook 1 part rice in 2 parts salted water for 14–15 minutes.
Store uncooked rice in a cool, dry place. Best before: 26 months from production date.
