Each piece is bronze-drawn, giving the pasta a naturally rough surface that holds onto sauces exceptionally well. The pasta is then slowly dried, a method that preserves its nutritional value, texture, and the authentic aroma of durum wheat.
Fileja is instantly recognisable for its curved, tubular shape, achieved by rolling the dough around a thin rod, a technique inspired by handmade Calabrian pasta such as the traditional dinaculo. This shape makes Fileja perfect for rich and robust sauces — tomato-based, spicy, or meat-based — and especially delicious with spicy ’Nduja sauce, a classic Calabrian pairing.
